Mango Coconut Rice

This Mango Coconut Rice is similar to rice pudding and makes for a great start to the day.

Gather These:
1 cup jasmine rice, uncooked
2.5 cups coconut milk
1 ripe mango, diced
1 tbsp brown sugar
ΒΌ tsp nutmeg

Do This:
Slowly boil coconut milk. Add rice, sugar and nutmeg. Bring to a slow boil again. Cover and reduce heat. Cook until rice is tender, about 20 minutes. Add diced mangoes.
