Tofu Scramble

Tofu Scramble

Gather These:
1 package extra firm tofu, pressed and drained
2 tbsp olive oil
3 green onions
½ cup green or red bell pepper
¼ tsp black pepper
¼ cup chopped tomatoes
¼ cup chopped mushrooms
¼ cup chopped kale
½ tsp turmeric
¼ tsp paprika
Salt to taste

Do This:
Heat oil in medium sauce pan. Add turmeric, paprika and black pepper. Then add green onions and peppers. Sauté for 2 minutes. In a small bowl, mash tofu with a fork until it reaches the consistency of scrambled eggs. Add tofu to saucepan. Stir until coated and yellowish. Add tomatoes and kale. Cook for 2 minutes. Add mushrooms and stir until cooked. Add salt to taste and serve hot.
